Ingredients
2 cups Watermelon, Peeled, Seeded, cut into 1 1/2x1 1/2x1/2-inch squares
2 Heirloom Tomatoes, sliced into 1/2-inch rounds
2 Zespri® SunGold Kiwifruit, peeled and sliced into 1/4-inch rounds
1/4 tsp Salt
1/8 tsp Black Pepper, ground
1/3 cup Olive Oil
2 tbsp Balsamic Vinegar
2 tbsp Red Wine Vinegar
3/4 cup (6oz) Feta Cheese, crumbled
2 tbsp Oregano
2 tbsp Parsley
2 tbsp Tarragon
2 tbsp Mint
Directions

1. Mix watermelon, tomatoes, kiwifruit, salt and pepper in medium bowl; set aside

 

2. Whisk olive oil, balsamic and red vinegar in small bowl; set aside.

 

3. Place 4 squares watermelon on each salad plate. Layer 4 slices tomato and 4slices kiwifruit over melon. Drizzle half of vinaigrette over kiwifruit. Mix remaining vinaigrette with feta cheese and herbs and sprinkle over kiwifruit. Serve immediately.
